I've been thinking about cool places and sparkling wines since Memorial Day and wanted to share this one I had about a year and a half ago. We were on a CA trip as usual, shopping in Carmel-by-the-Sea and came across this wine cellar on Dolores between Ocean Street and 7th. If you've ever been to Carmel, then you know that is where pretty much everyone hangs out to shop, eat, and drink. It's beautiful!
This is the cellar sign we happened upon one night while walking the streets and shopping. It said "wine tasting" in the window, so we walked on in.
You can't tell, but the quaint French awnings are dark green. So fitting for the cellar that produces sparkling wines that have been named "Old World"!
In the tasting room, you can taste a flight of wines or taste wines individually. The cellar offers a cheese platter from a local cheese shop and a charcuterie plate with hand selected meats.

This sparkling wine has a light salmon hue to it. It is 60 percent Pinot Noir and 40 percent Chardonnay and sold for $52. Maybe July 4 this year will be the year to open it!
